GRIDDLED ASPARAGUS AND BROCCOLI WITH WHIPPED FETA

Ready in 20 minutes

INGREDIENTS


1 tbsp olive oil
300g fine asparagus
200g Tenderstem broccoli handful of pea shoots
3 tbsp chopped pistachios
Lemon wedges

For the whipped feta:

200g feta cheese
50g Greek yoghurt
1 garlic clove, crushed
Zest 1 lemon plus a little juice
1-2 tbsp extra virgin olive oil

To serve:

1 tbsp chilli oil
1½ tbsp honey
pinch chilli flakes


METHOD


1. To make the whipped feta, crumble the feta into a blender and add the Greek yoghurt, garlic, lemon zest and juice and the olive oil. Blend until perfectly smooth, adding more oil if needed to give a light consistency. Taste and add more lemon juice if needed. Set to one side.

2. Trim the asparagus and cut the Tenderstem into bite-size pieces. Place in a bowl, drizzle with the oil and season. Heat a griddle pan and sear the veggies in batches until softened and lightly charred.

3. To serve, spoon and spread some of the whipped feta over a plate and top with the griddled veggies. Add some pea shoots, chopped pistachio and lemon wedges. Finish with a drizzle of chilli oil and honey and a scattering of chilli flakes.
