TUNA NICOISE SALAD

Our protein-packed take on Tuna Niçoise is delicious. Go for Rio Mare Tuna with Lemon and Black Pepper, which has a luxurious texture with a citrus zing and subtle warmth from the pepper.

Divide 250g cooked new potatoes, 100g steamed edamame beans and 100g halved baby plum tomatoes between two shallow

bowls. Scatter with a handful of baby spinach leaves, a little sliced red onion and some fresh basil leaves. Combine and top each with 65g can tuna in extra virgin olive oil. Finely chop 10 pitted black olives and combine with a little crushed garlic, 1 tsp red wine vinegar, a pinch of sugar and 3 tbsp olive oil. Season and drizzle over the salad.
