GO-TO TOMATO SAUCE

INGREDIENTS


3 tbsp olive oil

3 garlic cloves, chopped

Sprig rosemary

400g can chopped tomatoes

Good pinch chilli flakes

1 tsp sugar


METHOD


1. Gently heat the oil in a saucepan, add the garlic and rosemary and fry, taking care not to allow the garlic to burn. Once fragrant add a couple of spoonfuls of the chopped tomatoes –this will cool the oil down a little and prevent anything from burning. Add the chilli flakes and continue to fry until the garlic is cooked through.

2. Add the remaining chopped tomatoes and a can full of water. Add the sugar and season well. Bring to the boil and simmer for around 15 minutes until rich and thickened. Check the seasoning and add more sugar if needed to balance out the flavour.
