SPICY LAMB KOFTAS

Ready in 40 minutes plus chilling

Ingredients


1 tbsp rapeseed oil
1 small red onion, very finely chopped
2 garlic cloves, chopped
1 tsp each cumin seed, ground coriander and paprika
500g lamb mince
1 tsp tomato purée
good pinch cinnamon and chilli flakes


To serve:


cracked wheat salad*
houmous


Method


1 Heat the oil in a large frying pan, add the onion and a good pinch of salt and gently cook for 10 minutes. Add the garlic and cook for 1 minute. Add the spices and cook for 2-3 minutes until aromatic. Place the lamb in large bowl and add the onion mixture, tomato purée and cinnamon and chilli flakes. Combine well and divide into 16 balls. Skewer and chill for 20 minutes.

2 Wipe out the pan and preheat until hot. Cook the skewers for 10-15 minutes, turning occasionally until cooked through and lightly charred. Serve with houmous and cracked wheat or couscous salad.
