SARAH RANKIN’S PERFECT VALENTINE’S DAY BREAKFAST
MasterChef finalist, food writer and private chef, Sarah Rankin, shares her recipe for her ‘Proper Scrambled Eggs’

Nothing says I love you more than breakfast in bed. But you should know that toast simply will not cut it. So here is my Proper Scrambled Eggs recipe…
Crack your eggs into a bowl and season. Keep the pan on a very low heat and throw in a cube or two of unsalted butter to make the dish creamy and rich. Melt that down and pour in your beaten eggs. You will need two per person. Begin to fold and turn the eggs around in the pan, moving them all the time but not beating them furiously. This is a gentle operation to be conducted with care and a rubber spatula is best. Keep folding and turning, lifting any setting egg from the sides and bottom of the pan until you have a just-set, ultra-creamy mixture. Serve immediately on well buttered toast and add your favourite toppings. I’d go for sautéed mushrooms with garlic and crispy prosciutto. Just go easy on the garlic. It is kissing season after all!
