PERFECT MIDWEEK MEAL FOR TWO

Slice a 250g block of This Is Super Superfood and fry in a little oil for 5 minutes, turning occasionally – I brushed it with a blend of sweet chilli sauce and soy as it cooked. Cook 200g udon or egg noodles, drain and set to one side. Pour 800ml boiling water into a pan and add 2 tbsp each of white miso and soy sauce. Drop in 150g Tenderstem broccoli, simmer for 2 minutes, add 100g sugar snaps, 4 shredded spring onions and 1 shredded carrot, simmer for 2 minutes. Divide noodles between two bowls, add veg and broth, top with sliced Superfood. If you prefer chicken, follow the recipe omitting Superfood and top finished dish with 100g of shredded cooked chicken. Finish with coriander, chilli oil if desired and squeeze of lime.
