HEALTHY FOOD SWAP: APPLE SAUCE INSTEAD OF OIL
From muffins to carrot cake, oil is an essential ingredient in baking. Or is it?

It turns out that apple sauce is an excellent substitute for oil in baking. Apples are high in vitamins, minerals and fibre, which makes them a more nutritious option than oil and butter.
The sauce adds moisture to bakes and a natural sweetness, which means you can also reduce the amount of refined sugar in a recipe. The texture of your finished cakes may be slightly different, with a softer, denser and moister finish.
Usually, when swapping apple sauce for oil in baking, use a 1:1 ratio, such as 100ml apple sauce for 100ml oil. If you are trying a new recipe, start with half apple sauce and half oil, reduce other liquids a bit, and lower the oven temperature by 15°C (25°F) because the sauce adds moisture and can make things brown faster. To make your own apple sauce, simmer four peeled and chopped apples in 200ml of water for about 25 minutes, then blend or mash them. This swap works especially well in carrot cake or muffins.
