JERSEY ROYALS SPRING SALAD
Ready in 25 minutes

INGREDIENTS
750g Jersey Royals
4tbsp mayonnaise
4 tbsp natural yoghurt
1 heaped tsp wholegrain mustard
1 tsp runny honey
6 spring onions, finely sliced
8 cornichons, finely chopped
2 tbsp finely chopped parsley
2 tbsp finely chopped chives
METHOD
- Scrub the potatoes and drop into a pan of cold water, halving any that are large. Bring to the boil and simmer for 15 minutes until tender. Drain well and set aside in a large bowl.
2. Combine the mayonnaise, yoghurt, mustard and honey in a medium bowl and season well. Add the spring onions, cornichons and herbs to the potatoes and pour the dressing over. Add a little more seasoning and combine well. Serve at room temperature for the best flavour.
